To defrost frozen bread without making it soggy, completely wrap it in a paper towel and place it on a rack at room temperature. The paper towel absorbs excess moisture, helping the bread thaw evenly and stay fresh.
To whip cream faster and more evenly, chill the cream and use either a refrigerated bowl or a room temperature copper bowl. Whisk side to side instead of straight up and down; vertical whipping works better for egg whites. Side-to-side whisking creates friction, incorporates the right amount of air, and helps the fat form smooth whipped cream.
