  • To defrost frozen bread without making it soggy, completely wrap it in a paper towel and place it on a rack at room temperature. The paper towel absorbs excess moisture, helping the bread thaw evenly and stay fresh.
  • To whip cream faster and more evenly, chill the cream and use either a refrigerated bowl or a room temperature copper bowl. Whisk side to side instead of straight up and down; vertical whipping works better for egg whites. Side-to-side whisking creates friction, incorporates the right amount of air, and helps the fat form smooth whipped cream.
